The small, oval leaves have a pleasant, slightly sweet, nutty flavor and are eaten raw in salads, stir-fried, or added to soups; they are exceptionally high in protein (up to 7% fresh weight), Vitamin C, iron, and carotenes. Harvest young shoot tips of 4–6 inches continuously — the plant produces new growth prolifically in warm weather. In zone 9 it may die back in winter but usually re-grows from roots with mulch protection. Important caution: raw katuk should not be consumed in very large quantities daily, as excessive raw consumption has been linked to respiratory issues; normal culinary use is safe.
