Flour corn is the ancient soft-starch corn type developed by indigenous peoples of the Americas for grinding into fine cornmeal and masa — its kernels, composed almost entirely of soft, starchy endosperm without the hard, glassy outer layer of flint corn, grind into an exceptionally fine, silky flour with a mild, sweet flavor superior for baking cornbread, making hominy, and preparing traditional tortillas and tamales. Classic open-pollinated varieties like 'Hopi Blue' (a flour-type despite sometimes being called flint), 'Bloody Butcher', and 'Aztec Red' flour corns were grown for centuries by Pueblo peoples of the American Southwest, where soft corn was the staple grain; in the Gulf South, flour corns adapted to humid climates perform well as spring and fall crops. The soft kernels are more susceptible to corn earworm and storage fungi than hard flint or dent types — harvest promptly when husks dry, dry completely before storage, and store in sealed containers with desiccant in a cool, dry location. The beautifully colored ears of traditional flour corn varieties make outstanding autumn decorations before grinding.
