Flint corn is among the oldest cultivated corn types — the 'Indian corn' of the Americas, developed by indigenous peoples across North and South America over thousands of years in varieties of brilliant, diverse colors ranging from deep purple and blue-black to red, orange, yellow, cream, and multi-colored — and is both the most ornamental and among the most nutritious of all corn types for human consumption. The hard, glassy (flint-like) kernels have no dent when dry because they are mostly dense, hard starch rather than the soft floury starch of dent corn; this dense endosperm produces superior polenta and grits with more complex flavor than modern hybrid dent corn. Classic open-pollinated varieties like 'Glass Gem', 'Bloody Butcher', and 'Hopi Blue' are primarily flint types celebrated both for their ornamental dried-ear beauty and their exceptional culinary quality when ground into stone-milled cornmeal. Grow to full dry-grain maturity by allowing husks to dry completely on the stalk before harvest; cured ears can be used as autumn decorations, then shelled for grinding or replanting.
