Plant in well-drained, average to sandy soil in full sun; Celeste is the most popular and cold-hardy fig in the Deep South, producing small to medium, violet-brown figs with a honey-sweet, rose-pink interior that ripen mid-July through August. It is the standard home garden fig from Virginia to Texas and is considered by many to have the best flavor of any common fig variety. Figs fruit on second-year wood and on new growth late in the season — do not prune heavily in winter. Mulch roots in zone 7 to prevent root freeze-kill. Trees rarely need fertilizer and will produce heavy crops with minimal care once established. Other excellent Gulf Coast cultivars include 'Brown Turkey', 'LSU Purple', and 'LSU Gold'.
