For home gardeners, dent corn varieties like 'Hopi Blue', 'Reid's Yellow Dent', or 'Bloody Butcher' are grown to full dry-grain maturity (husks dry and papery, kernels hard), then shelled and ground in a stone mill for the most flavorful, nutritious cornmeal and polenta. In the Gulf South, excellent heat-tolerant open-pollinated varieties can be grown spring and fall, with adequate irrigation during tasseling and pollination being critical for good ear fill; dent corn has been a cornerstone of Gulf Coast homestead gardens since colonial times. Harvest when kernels are completely dry and hard — typically 90–120 days from planting — then shell and store in cool, dry conditions for grinding throughout the year.
