Field Corn (Dent Corn)

Field corn (dent corn) is the primary grain corn of American agriculture and the most versatile of all corn types for the home garden and homestead — used as dried grain, cornmeal, animal feed, and the raw material for bourbon whiskey, the kernel's characteristic 'dent' or indentation forms as the starchy center dries and shrinks. For home gardeners, dent corn varieties like 'Hopi Blue', 'Reid's Yellow Dent', or 'Bloody Butcher' are grown to full dry-grain maturity (husks dry and papery, kernels hard), then shelled and ground in a stone mill for the most flavorful, nutritious cornmeal and polenta. In the Gulf South, excellent heat-tolerant open-pollinated varieties can be grown spring and fall, with adequate irrigation during tasseling and pollination being critical for good ear fill; dent corn has been a cornerstone of Gulf Coast homestead gardens since colonial times.
