Quinoa is an ancient, nutritious South American grain, and this rainbow blend adds striking seed-head colors of hot pink, burgundy, red, orange, yellow, white, and green. Direct sow in early spring in cool soil, in full sun and well-drained ground. The tender young leaves can be cooked like spinach, while the protein-rich seeds are harvested when the plants dry down. Rinse the harvested seeds well to remove the naturally bitter saponin coating before cooking. Give the tall plants room, as they can reach 4 to 6 feet.
