The toothlike, segmented underground rhizomes have a sharp, peppery wasabi-horseradish flavor and were gathered by Native Americans and early colonists as a condiment; they can be grated fresh or fermented like horseradish sauce. A true spring ephemeral, the entire plant disappears by late spring after setting seed, forming expanding colonies in rich, shaded conditions. Plant with other spring ephemerals — trout lily, bloodroot, Virginia bluebells — in a rich, shaded woodland garden for a sequence of color from late winter through May before the canopy closes.
