Banana Shallot

A large elongated shallot combining the size of an onion with a shallot's refined flavor. Plant individual sets in early spring with the tip barely showing, spacing them 6 inches apart. Unlike clustering shallots, banana shallots often size up as a single large bulb, so give each room. Keep weeded and evenly watered until tops begin to yellow in midsummer. Lift, cure thoroughly, and store the papery bulbs in a cool dry place for months.
