Sow seed 1/4 inch deep in cool, fertile soil and thin to about 5 inches apart, or grow in containers. This Asian green, also called pak choi, is ready in about 35 days when harvested at 5 to 6 inches tall for tender baby choi. It resists bolting and makes an attractive addition to mixed containers. Keep soil evenly moist to prevent bolting, and harvest whole heads or outer stalks for stir-fries and marinated salads.
