Plant stem cuttings in spring in deeply cultivated, well-drained, slightly acidic to neutral soil in partial shade; arracacha is one of the most important root crops of the South American Andes and is gaining attention among adventurous food gardeners in mild climates for its exceptional flavor — the white to cream-colored roots have a starchy texture and a flavor that combines the best qualities of celery, carrot, and parsnip with a slightly sweet, buttery richness. The roots are boiled, roasted, fried, or used in soups; they do not store well after harvest and are best consumed within a few days. The plant resembles a flat-leafed parsley or celery relative with compound leaves and naturally produces multiple offsets from the crown that can be replanted as cuttings to propagate. It thrives in the cool, humid conditions of zones 8–10 coastal areas and mild highlands where temperatures remain moderate — it is not well suited to the extreme summer heat of the Gulf Coast interior but performs in coastal areas and in partial shade.
Спосіб посадки: Розмноження діленням куща
Відстань між рослинами: 18–24 дюймів
Висота: 18–36 дюймів

Час посадки: 0–4 тижнів spring
Plant stem cuttings (side shoots from the crown) in spring in well-drained, deeply cultivated, slightly acidic to neutral, moderately fertile soil in full sun to partial shade; arracacha requires 9–12 months from planting to harvest and performs best where temperatures range 57–75°F — it struggles in heat above 85°F and is best suited to mild coastal or highland climates in zones 8–10.
