Plant in deep, rich, moist, humus-laden soil under deciduous hardwoods; ramps are spring ephemerals of the eastern North American forest floor, emerging early when trees are still bare before going fully dormant by midsummer. Both the broad, elliptic leaves and the pungent garlicky-oniony bulbs are edible and among the most sought-after wild foods in Appalachian cuisine. Harvest no more than one leaf per plant, leaving the bulb to regenerate; never harvest more than 10% of any patch to prevent depletion. Plants are notoriously slow from seed — 5–7 years to first harvest — but once established form long-lived, self-seeding colonies. Purchase ethically sourced bulbs and replant promptly in autumn.
